200ml fresh lemon juice
500g granulated sugar

For the Premix (makes 850ml, to serve 10)

Fresh cranberries, to garnish

Directions

For the Cordial: Combine every ingredients into a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Then, remove from the stove allowing it to cool down fully. Transfer into an sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for about one month.

To make Batch Mix: Mix the specified liquids into a sizeable container, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, so it's perfectly clear.

When ready to serve: Add 85ml from the batch mix into your mixing glass packed with ice, gently stirring lightly for about 60 seconds to chill. Filter to a frosted cocktail glass or similar, decorate with some cranberries and complete it by giving it a light spray with the mandarin essence over the top.
